This Monday, much like every other Monday, came around far too quickly and after another stunning weekend, it was back to work (at my new job might I say).
It’s been a whirlwind of a week starting a new job; from meeting the team, learning the ropes and a Christmas party all in the first week. They say change is as good as a holiday, and after last week starting at a new workplace, I can say that’s true. The change of scenery, summery weather, and the fact that fresh berries are in season is reason enough for a new morning routine. I’m swapping out my smoothies and oats for this delicious berry granola.
My berry granola is protein packed, light and refined sugar-free making it the perfect breakfast to kickstart your morning and start your day right. The raw quinoa adds a whole new level of deliciousness and crunch into the mix (and is super good for you)!

Makes 4-6 cups
2 1/2 cups oats
1 cup white quinoa (raw)
1/2 cup coconut Slices
1 cup almonds
1/2 cup puffed buckwheat (optional)
2T chia seeds
3T coconut oil
1 1/2 cup dried berries (I used FreshAs dried strawberries and dried blueberries)
1. Preheat the over to 180 degrees and line a deep dish with baking paper
2. Mix the oats, quinoa, coconut slices, almonds, puffed buckwheat and chia seeds in a large bowl.
3. Melt the honey and coconut oil and stir through the dry ingredients, spread out in the oven dish. Bake for 10-15 minutes.
4. Once cooled transfer into a airtight container for 2-4 weeks (if it lasts!)
