Peanut butter crunch balls

Stormy Sundays call for meal prep and sweet treats. These peanut butter babies have been on my mind all week as I promise myself to get back on the health bandwagon. After a few weeks of neglecting exercise and a pretty horrific cold I finally feel myself again. These balls are packed with all the goodness for a mid afternoon snack to tie you over or a pre-run boost.

This recipe was inspired by combining two of The Toasted Pinenuts delicious recipes almonds chocolate balls and peanut butter balls. They turned out pretty damn good if I do say so myself (I even have witnesses). Tag me @simplytheora if you make these but otherwise enjoy and happy Monday!

1/2 c Puffed quinoa

1c oat flour (feel free to substitute with almond, quinoa etc. I used a mix of oat & quinoa flour)

2T protein powder (Vanilla)

50g dark chocolate chips (plus extra for drizzling

2T honey

1T maple syrup

1t vanilla essence

1/2c + 1T of peanut butter

Makes 20-24 balls

Mix all wet ingredients (peanut butter, honey, vanilla essence and maple syrup) in a food processor until well combined.

Add the protein powder, oat flour and quinoa flour and mix well. Stir through the puffed quinoa and dark chocolate.

Roll into small balls. Melt the rest of the chocolate and either drizzle over the balls OR coat them in it.

Store in an airtight container in the fridge or freezer for 1-2 weeks
